Titanium Dioxide (E171) is a water soluable mineral based food colouring used to achieve a BRIGHT WHITE.

Titanium Dioxide is one of the best white pigment agents available. It is fat soluble and is generally used in any chocolate work where you require a whiter result. A small amount added to white chocolate will remove its natural yellow colour. It can also be used to turn fondant icing, modelling paste & flower paste into a brilliant shade of white.

When adding titanium dioxide to colour white chocolate, it is best to add it during the melting process to help the colour come out smoother.
